<p><strong>Ingredients</strong><br />
1 teaspoon lemon juice<br />
1 pear, peeled, cored and finely chopped<br />
1/4 cup plain yogurt<br />
2 tablespoons crumbled blue cheese<br />
2 teaspoon honey<br />
1 tablespoon apple cider vinegar<br />
1/2 cup red cabbage, finely shredded<br />
2 tablespoon walnuts, chopped<br />
3 tablespoons dried cranberries<br />
16 large leaves endive</p>
<p><strong>Method</strong>
<ul>
<li>Toss pears in with lemon juice and set aside.</li>
<li>Combine, yogurt, blue cheese, honey, and vinegar in a bowl; season with salt and pepper. </li>
<li>Add walnuts, pears, cabbage, and cranberries; toss well to coat. </li>
<li>Place a spoonful of salad on each endive leaf.</li>
</ul>
